Vegetables and chicken stew (Low calorie)

I present here a recipe of a stew that is light and easy to make. The best thing about it is that the ingredients needed are usually available in every household. You can add all your favorite vegetables in it. It has all the nutrients and low in calories. That makes it perfect for those who want to lose a few extra kilos. And my friends who are vegetarian, do not worry, all you need to do is not to add chicken to it. The stew will taste as good.

Ingredients

  • Cauliflower- 1/2 cup
  • Broccoli- 1/2 cup
  • Carrot-  1/2 cup
  • Green French beans- 1/2 cup
  • Potato- 1 cubed
  • Tomato- 1 cubed
  • Mix bell peppers- 1/2 cup
  • Mushroom- 1/2 cup
  • Chicken pieces- 4 (I used leg and thigh pieces) 250 gms approx
  • Onion- 1 sliced
  • Ginger-garlic chopped- 1 tablespoon
  • Green chilli- 1 finely chopped
  • Ginger-garlic paste- 1/2 teaspoon
  • Water- 500 ml
  • Oil- 1/2 tablespoon

Spices

  • Bay leaf- 1
  • Cinnamon sticks- 2 small pieces
  • Green cardamom pods- 2
  • Cloves- 3-4
  • Turmeric powder- 1/3 teaspoon
  • Black pepper powder- 1/3 teaspoon
  • Coriander powder-1/2 teaspoon
  • Garam masala- 1/2 teaspoon
  • Cumin seeds- 1/2 teaspoon
  • Salt to taste
  • Lemon slices for garnishing

Method

Heat a pan and add oil in it. Then add cumin seeds, bay leaf, cardamom, cloves and cinnamon sticks in it. Saute it for a few seconds.

Add in chopped ginger, garlic, and green chillies along with the ginger-garlic paste. Saute it well, then add sliced onions. Fry the onion until its light brown in color.

Add the chicken pieces and fry it for 2-3 minutes. Add the potatoes, carrots, cauliflower, broccoli, tomatoes, and beans in it. Add all the spices and salt and saute it well. Add a little water and mix them well. Cover it and let it cook for 5 minutes on medium to low flame.

Now add the remaining vegetables, mushroom, and bell pepper in it and fry it and again.

Cover it for 2 minutes. Add water, cover it and let it simmer for 20 minutes. Keep stirring in between

Once all the chicken and veggies are cooked properly, switch off the gas.

Serve hot with a slice of lemon.

 

NOTE:-

You can make this recipe in pressure cooker also. Cook this for 2 whistles and let the pressure release from the cooker by itself.
