Pumpkin and Carrot Halwa

Carrot halwa or gajar ka halwa is very famous dessert pudding of India. Here is my twist with pumpkin.

Ingredients

  • Grated Pumpkin- 1 cup
  • Grated Carrots.     1 cup
  • Powdered Sugar- 2/3 rd cup
  • Mawa (Khoya)- 1/3 cup
  • Ghee (Clarified Butter)- 4 tablespoons
  • Milk- 1/2 lt
  • Almonds- 8-10 sliced
  • Crushed cardamom – 4

Method

 

Heat a kadhai over medium heat and add ghee or butter. Once its hot then add sliced almond and fry in for a few seconds and take it out in a bowl.

Now in the same ghee, add grated pumpkin and carrots and fry it for 2-3 minutes on medium to high heat.

Reduce the heat to medium and keep frying them for atleast 15 minutes.

Now add the milk to it, mix it well and let it cook for 2 minutes. After that cover it with a lid and cook it for 10 minutes over medium flame.

Keep stirring in between and again cover it and let it cook for 5 minutes.

After 5 minutes open the lid and cook it until all the milk is absorbed and carrots and pumpkin turn tender and soft.

Once the milk is fully absorbed then add mawa in it, mix it well and let it cook for 5 minutes by stirring continuously.

Add sugar and cardamom and mix it well. Let the sugar melt completely and keep stirring the halwa. It will again become a little watery at this point of time. You just have to keep stirring until all the sugar is absorbed and the halwa gets dry.

Add fried almonds, keep few pieces for garnishing and let it cook for some time until its dry and become half of the quantity. Switch off the gas and let it cool down a little before serving.

Pumpkin and carrot halwa is ready to serve. Serve hot or cold and garnish it with some fried almonds and relish this delicious halwa anytime.

Note: You can make mawa with powdered milk in a microwave. In a microwave safe bowl add one cup of powdered milk, two tablespoons of ghee or butter, half cup milk and mix it well. Now, put it in a microwave for two to three minutes until it becomes semi-solid. Keep stirring in between. Do not forget to keep stirring every 30-40 seconds else it will spill over.
