Oats and vegetables Omelette

Serves- 2 Level of cooking:- Very easy
A quick and light breakfast recipe full of green veggies and rich in protein. Try this omelette full of veggies and oats and say hi to healthy life style .
Ingredients
- Eggs- 4
- Oats- 1/2 cup
- Onion- 1/2 finely chopped
- Green Bell pepper- 1/2 finely chopped
- Red Bell pepper – 1/2 finely chopped
- Tomato- 1/2 deseeded and finely chopped
- Green chilli- 2 finely chopped
- Garlic- 2 cloves grated
- Ginger- 1 inch grated
- Green coriander leaves- 2 tablespoons approx chopped
- Salt- to taste
- Black pepper powder- 1/3 teaspoon
- White pepper powder- 1/3 teaspoon
- Mixed herbs or dry oregano- 1 teaspoon
- Olive oil- 1 tablespoon
Method
In a bowl break all the 4 eggs. Add salt and other seasoning, whisk it well.
Add in all the veggies and oats and again whisk it well. You can use spoon or fork to mix it well.
Once mixed properly then cover it and let it sit for 5 minutes.
After 5 minutes, again whisk it and heat a pan over medium heat.
Light brush the pan with olive oil and spread half of the mixture evenly and cover it with a lid and let it cook for 2 minutes on medium heat.
After 2 minutes, open the lid and apply some oil on top and gently flip it, cover and let it cook for a minute.
After a minute, take it out in a plate and its ready to serve. Serve hot as it is or you can eat it with ketchup or with a dip or sauce.
