No bake cream cheese cake with cherry toppings

 

Cherry cheese cake is a soft and creamy cake. It is a perfect dessert. With cherry toppings it becomes even more delicious. Here is an easy step by step guide to prepare a delicious cherry cream cheese cake which you can enjoy with your family and friends.

For Cherry Toppings

  1. Fresh cherries- 1 bowl
  2. Sugar- 1/2 cup
  3. Corn starch- 1 tablespoons
  4. Water- 1/2 cup
  5. Salt- 1 pinch
  6. Cinnamon powder- 1 pinch
  7. Nutmeg powder- 1 pinch
  8. Paprika powder- 1 pinch

For the crust

  1. Digestive biscuits- 15-20 pieces (sugar free)
  2. Sugar- 1-2 tablespoons
  3. Butter- 1/3 cup melted

For Cheese Cake

  1. Cheese cream- 1 pack 200 gms
  2. Whipping cream- 1 pack 200 ml
  3. Sugar- 1/2 cup
  4. Vanilla essence- 1 teaspoon
  5. Gelatin powder- 1 tablespoon
  6. Water- 2-3 tablespoons

Method for making cherry toppings

Remove the stems and seeds from the cherries and keep them in a bowl.

Make a slurry with corn starch and 2 tablespoons of water and keep it aside.

Now boil remaining water in a saucepan and add cherries to it. Let it cook for 15 minutes.

Next, add sugar and let it boil for another 5 minutes. Add the seasoning spices and salt and mix it well.

When cherries become soft, then add cornstarch mixture to it and stir it well. Cook it for a few more minutes until you get a nice thick syrup. Remove from the gas and transfer it into a bowl. Let it cool completely. The cherry toppings is ready now.

Method for cheese cake Base

 

In a zip lock bag add all the biscuits and crush it with a help of rolling pin. Make a powder out of it and transfer it into a bowl.

Now add sugar and melted butter to it and mix it well with your hands until you get a nice crumbly texture.

Transfer the biscuit crumbs into a buttered spring fold pan. Press it hard with the back of a glass to make it smooth. Keep it in fridge for half an hour.

 

NOTE:- If you are using normal digestive biscuits then don’t add sugar.

Method for cheese cream cake batter

 

In a bowl, add cream cheese, sugar and vanilla essence. Mix it well with a spoon or a whisk. and keep it aside.

In a small bowl, mix gelatin and water and let it sit for 5 minutes.

Now whip the cream until you get a nice stiff peaks. Now fold the cream cheese mixture with whipped cream and lightly mix it until well combined.

Now, put the gelatin in a microwave for few seconds and immediately mix it with the cream cheese and whipped cream mixture.

Now take out the pan from the fridge and gently pour this batter over biscuit crust and refrigerate it for 2-3 hours.

After 2-3 hours, when it is set, spread the cherry toppings mixture on top of it and again refrigerate it for at least 5-6 hours ( preferably overnight).

No bake cream cheese cake with cherry toppings is ready to serve.

Slice it and enjoy!
