Nimki or Namak Pare (Salted Fried Crackers)

Nimki or Namak Pare is a popular Indian snack which is mostly made in every household as a tea time snack. It goes very well with pickles or you can munch it as it is. In northern India we called it “Nimki” which means a salty snack. It is one of the easiest snack to make during festivals. It is made from maida (Refined Flour). The maida dough is cut into diamond shape and then deep fried. You can store it for a month in an air tight container.

I remember my  mom often used to make this in large quantities and store it because my father was very fond of this “Nimki” and they used to have it with tea. Whenever my brother and me used to leave home after holidays, she used to make them in a big lot and pack it for us. We used to enjoy this snack a lot in our hostel during our student days.

Ingredients

  • Maida or Refined flour- 1 and half cups
  • Ghee (Clarified butter)- 1/3 cup (You can use refined oil also)
  • Mix of Ajwain (carom seeds) and Kallonji (Nigella seeds)- 1/2 teaspoon
  • Salt to taste
  • Water- 1/2 cup or as required for kneading the dough
  • Refined oil- for frying

Method

In a large bowl sieve maida (flour). Add salt, ajwain and kallonji and mix it well. Add ghee and keep mixing it till it gets crumbly.

Slowly add water and knead it in small batches. Combine well and knead it into a tight dough.

Cover the dough with a wet cloth and let it rest for 10 minutes.

Heat enough oil in a kadhai or a deep pan on low flame.

Meanwhile, divide the dough into three balls of same size. Take a ball and roll it with a rolling pin into a circle.

It should not be very thin or thick. Now take a knife and cut it into small pieces in a diamond shape.

Now carefully drop them in the hot oil and fry till it turns golden brown in color. Do not fry them on high heat, oil should be on medium flame while frying.

Take out in a kitchen towel and after it cools down, store them in an air tight container. It will last for a month.

Enjoy this with a cup of tea.
