Masala Vada (Fried Lentil patties)

Masala Vada is a South Indian snack which is made from Chana dal and some spices. These Vadas are crispy from outside and soft from inside.
Preparation time:- 3-4 hours soaking Cooking Time:- 30 minutes
Makes:- 20 vadas Level of cooking:- Moderate
Ingredients
- Chana Dal (Bengal gram)- 1 and half cup ( Soaked in water for 3-4 hours)
- Boiled Potatoes- 1 cup (6 small size potatoes)
- Rice flour- 1/3 cup (2 tablespoons)
- Green chilli chopped- 1 (Add according to your taste)
- Green coriander chopped- 1 tablespoon
- Ginger paste- 1 teaspoon
- Asafoetida (Hing)- 1/2 teaspoon
- Fennel Seeds crushed (Saunf)- 1 teaspoon
- Dry Mango Powder (Aamchur)- 1 teaspoon
- Turmeric powder- 1/4 teaspoon
- Salt- to taste
- Black pepper crushed or powder- 1/3 teaspoon
- Oil- to fry
Method
Soak the chana dal in 3-4 cups of water for about 3-4 hours. After soaking in water it will double in volume. In the picture shown above, they have been soaked for 4 hours.
Drain the water and keep it in a bowl. Keep a tablespoon of soaked dal aside. Coarsely grind the remaining dal into a paste and do not add any water while grinding. Put the grinded dal in a mixing bowl.
Mix all the other ingredients together with the dal i.e boiled potatoes, rice flour, salt, chillies, coriander leaves, fennel seeds, black pepper, asafoetida, dry mango powder, turmeric and ginger.
Mix it well into a nice batter.
Wet your hands with water and divide the batter into lemon size 20-22 parts. Wet your hands, take each part and make a smooth ball.
Flatten it with your hands a make a nice half inch thick patty.
Make all the patties before frying and keep them on a tray or a plate.
Now start frying the patties. Heat oil in a fry pan over medium to high heat. When its hot , reduce the heat to low to medium and gently drop the patties or vada in the oil. Drop 4-5 vadas at a time and make sure they don’t touch each other.
Flip the vadas 2-3 times and fry from both the sides for 5-6 minutes on medium flame until it turns nice golden brown in color.
Take them out over the paper tissue and serve hot with your favorite dip or chutney.
