Jeera Aaloo/Aaloo bhaaji without onion-garlic (Quick potato sabji) in 15 minutes

Aaloo bhaji/Jeera aaloo is very common in Indian households. If there are no vegetables in your fridge, then it is a lifesaver. And for all those who love potatoes a lot must try this recipe. Everyone has their own way of cooking. Here, I am sharing my version of potato sabji which is very easy and quick and is made without onion and garlic.  Do try this recipe and let me know how it turned out.

Ingredients

  • Potatoes- 5 medium size (Peeled and cut into small cubes)
  • Oil- 2 tablespoons
  • Cumin seeds- 1 teaspoon
  • Asafoetida or Hing- 1/3 teaspoon
  • Ginger grated- 1/2 inch
  • green chilies- 2 slits
  • Turmeric powder- 1/3 teaspoon
  • Coriander powder- 1/2 teaspoon
  • Kitchen king- 1/2 teaspoon
  • Garam masala- 1/2 teaspoon
  • Red chili powder- 1/4 teaspoon
  • Aamchur powder (Dry mango powder)- 1/4 teaspoon
  • Sugar- 1/4 teaspoon
  • Salt- 1/2 teaspoon or as required

Method

Soak the diced potatoes in water for at least 5 minutes. Take a normal polybag and place the diced potatoes in it and tie it properly. Now with the help of a knife, poke the plastic bag from all the sides. Now put the polybag in the microwave for 5 minutes. Carefully take out the plastic from the microwave and keep it aside for 2 minutes. 

Carefully cut the plastic and take out the boiled potatoes in a bowl.

Heat a pan and add oil. Once it is hot, add cumin seeds and hing . Roast the cumin seeds for few seconds.

Next, add the ginger and green chillies. Fry it for a few seconds then add all the spices, salt, and sugar. Add a tablespoon of water to it to prevent it from burning.

Mix the masala and add the boiled potatoes to it. Saute it well so that the potatoes are well coated with the masala. Cover it and let it cook for 3-4 minutes on medium flame.

If it is too dry then splash some water and again cover it and further cook for another 5 minutes.

You can garnish it with fresh coriander leaves. Serve hot with poori or paratha. Here, I served it with palak paratha.
