Gulab Jamun with milk powder

Gulab Jamun is a very popular Indian sweet. They are very soft balls made from milk solids and soaked in a rose flavored sugar syrup. Try this easy to make delicious gulab jamuns at home with milk powder during festivals or parties.

Ingredients for Jamuns

  • Full fat milk powder- 1 cup
  • Plain flour (Maida)- 1/3 cup
  • Fine Semolina (Sooji)- 1/4 cup
  • Ghee or butter melted- 1 tablespoon
  • Baking Soda- 1/2 teaspoon
  • Warm milk- around 1/3 cup more or less  as required in kneading the dough
  • Lemon juice- few drops
  • Oil- for frying

Ingredients for Syrup

  • Sugar- 1 cup
  • Water- 1/2 cup
  • Cardamom pods or powder- 3-4
  • Rose water- 1 teaspoon
  • Lemon juice- few drops

Method for preparing the Sugar Syrup

In a saucepan add all the ingredients of syrup: sugar, water, cardamom, rose water and lemon juice. Stir it well with a spoon.

Now place the saucepan on high heat and cover it for a minute.

Open the lid and cook until sugar melts completely. Stir occasionally and reduce the heat to low. No need to make a one or two thread consistency syrup. Switch off the gas and cover the saucepan. Keep it aside.

Method for preparing the jamuns

In a deep vessel or bowl add milk powder, semolina, maida, baking soda, ghee and lemon juice. Mix it with your hands until it forms a crumbly texture

Now slowly add in warm milk and start kneading it until it forms a soft dough. Keep adding milk very little at a time and combine the dough. They should be very soft.

Cover it with a wet cloth and let it sit for 10 minutes.

Now divide the dough into equal small ball size portions. Grease your hands with oil and take one ball at a time and press it tightly. Roll it between your palms and make smooth balls. Keep them in a separate plate. Repeat the process and make smooth balls.

Frying the jamuns

Heat enough oil in  a saucepan on high heat. When it is hot, drop a small ball to check the temperature. It should rise and come up. Reduce the heat to medium, Now gently drop 6-7 jamuns in oil and with the help a spoon rotate them and fry them slowly on a medium flame until it turns golden brown in color evenly.

Take out in a plate lined with a paper towel to remove extra oil

Fry the remaining jamuns similarily.

Now heat the sugar syrup again and switch off the gas. Gently drop all the fried jamuns in a hot sugar syrup and cover it. Let it be soaked in sugar syrup for atleast 1-2 hours. Serve hot or cold topped with sugar syrup.
