Egg Bharta

Egg bharta is a main dish you can serve hot with Roti, Paratha or Naan. Its very tasty and made with boiled eggs in a very creamy onion & tomato gravy. Its a must try recipe and do try it once and I bet you will make this recipe very often.
Ingredients
- Boiled eggs- 6 cut into thin round pieces
- Tomatoes-2 finely chopped
- Onion- 1 finely chopped
- Ginger grated- 1 teaspoon
- Garlic grated- 1 teaspoon
- Green chilli- 1 finely chopped
- Green coriander- 1 tablespoons chopped
- Turmeric powder- 1/2 teaspoon
- Red chilli powder- 1 teaspoon
- Coriander powder- 1 teaspoon
- Garam masala- 1 teaspoon
- Meat masala/kitchen king- 1 tablespoon
- Salt- 1/2 teaspoon or as per required
- Sugar- 1 teaspoon
- Yogurt- 2 tablespoons
- Tomato ketchup- 2-3 tablespoons
Method
Heat oil in a wok or fry pan, add chopped ginger-garlic-chilli and saute it for few seconds until the raw smell goes off. Now add chopped onions and salt, fry it till it turns light brown in color .
When onions are cooked properly and become golden brown in color then add chopped tomatoes and saute it for 2-3 minutes- Add tomato ketchup and again mix it well and cook in on low flame for a minute.
Now add sugar and all the powdered spices and cook it on low flame for 2 minutes. Furthermore, cover it and let it cook for 5 minutes.
If the mixture is looking dry you can add few splashes of water but not too much. Next, add yogurt to the masala and cook it for another 1-2 minutes. Now add the sliced eggs and keep stirring until the yolks get mashed into the masala and you see the egg whites only. At this stage add chopped coriander leaves and mix it and again cover it for 2 minutes. Open the lid and mix the bharta and switch off the gas. Garnish it with eggs and coriander leaves.
