Coconut Macaroons

 

 

 

 

 

Ingredients

  1. Egg whites of 4 large eggs at room temperature
  2. Sugar-1 cup
  3. Salt- 1/4 teaspoon
  4. Vanilla essence or extract-1 teaspoon
  5. Cake flour (self raising flour)- 1/2 cup shifted
  6. Dried coconut powder-3 cups
  7. Cherries- 7-8 pieces cut into halve.
  8. Melted chocolate for garnishing- 1 tablespoon (Optional)

Method

1.Place a saucepan with water on gas stove to boil. When its hot, simmer the gas and place another heat proof bowl over it and add the egg whites, sugar and salt and whisk everything together. When the mixture is warm and creamy, remove it from the saucepan and switch off the gas. Make sure the mixture is neither very hot nor cold. It should be warm so that you can touch it with your fingers.

2.Beat the egg whites and sugar mixture with an electric mixer and beat it for 3-4 minutes on high speed until it becomes creamy.

3.Add the vanilla extract to the mixture and mix it well.

4.Now sieve the cake flour to it and give it a nice mix.

5.Now add coconut powder and mix it with a spatula until all the ingredients are well combined and cover this mixture with plastic wrap and refrigerate it for 1-2 hours or until it gets firm.

6.Preheat oven at 170ÂșC and line the baking sheet with parchment paper.

7.Take out the mixture from refrigerator and with the help of ice cream scoop or spoon place one full heap on the parchment paper. Place all the round macaroons spacing 2-3 inches apart and place half cherry on each one of them.

8.Bake for 15-20 minutes or until golden brown. Remove from the oven and place it on wire rack to cool completely.

9. In a piping bag, add the melted chocolate and decorate it as per your choice
