Baked Eggs with Vegetables

An easy baked egg recipe, perfect for breakfast or a brunch. Give it a try, its very easy to make, delicious and nutritious dish.
You can refrigerate it for 2-3 days and its perfect for breakfast or any other family or friends gathering. You can enjoy this dish hot or cold.
Ingredients
- Eggs- 8
- Milk- 1/2 cup
- Onion- 1 chopped
- Capsicum- 1 chopped
- Carrots- 1 chopped
- Cabbage- 1 cup finely chopped
- Potato- 1 chopped
- Tomato- 1 chopped
- Spinach- 1/2 cup (I used frozen)
- Green chilli- 1 finely chopped
- Ginger-garlic paste- 1 teaspoon
- Salt to taste
- Black pepper- 1/4 teaspoon
- Dry oregano- 1/2 teaspoon
- Dry basil- 1/4 teaspoon
- Tomato ketchup- 1 teaspoon
- Olive oil -1 tablespoon
- Cheese- 1/2 cup (optional)
Method
Step 1
In a fry pan add oil and put onions and ginger-garlic paste. Saute it for a minute then add all the chopped vegetables. Add salt, pepper, oregano, basil and tomato ketchup. Mix it well and cover it and cook it for 5 minutes. Switch off the gas.
Step 2
In a bowl, whisk together eggs and milk with salt and pepper.
Step 3
Grease your 8×10 baking dish with olive oil.
Step 4
Line the bottom of the dish with sautéed veggies. Spread it evenly and pour the egg and milk mixture gently over the veggies. The egg mixture will completely cover the veggies. Sprinkle your favorite cheese on top (Optional).
Step 5
Bake it on preheated oven at 170 degrees for 30-40 minutes. Remove from the oven and allow it to set and cool for 10 minutes before serving.
Note:- Use whatever veggies you like or have in your refrigerator. You can add green onions, mushrooms, broccoli, paneer, green cilantro or any other herbs and vegetables. I never make this dish with the same ingredients, I added whatever veggies were in my refrigerator.
