Aaloo Paratha (Stuffed Potato Bread)

Ingredients for dough

  1. Wheat four- 2 cups
  2. Another half cup for dusting
  3. Salt- half teaspoon
  4. Carom seeds (ajwain)-1 teaspoon
  5. Oil- 1 tablespoon
  6. Plain water – 1 cup or as required

For filling

  1. Boiled Potatoes- 4 medium size
  2. Coriander seeds- 2 teaspoon
  3. Whole black pepper corns-1/2 teaspoon
  4. Green chillies-1-2 finely chopped
  5. Ginger- 1 inch finely chopped (donot use ginger paste)
  6. Red chilli powder-1/2 teaspoon (optional)
  7. Black salt-1/4 teaspoon
  8. Salt to taste
  9. Dry mango powder (Aamchur)-1/4 teaspoon
  10. fresh coriander leaves-1 teaspoon finely chopped
  11. Oil-3-4 tablespoon for frying

Method

1.Knead the dough-Add wheat flour in a deep bowl, add salt, Carom seeds (Ajwain)and Oil and knead a soft dough by adding little water at a time. Apply little oil on top of the dough so that it does not dry.

2.Cover the dough with a wet muslin cloth and keep it aside for 15 minutes

3.In a small frypan dry roast the coriander seeds and pepper corns. When its done, crush it with the help of rolling pin or you can also use grinder and coarsely grind them.

4.Now make a filling- Take the boiled potatoes in a bowl and mash it with your hands. Make sure that there are no big pieces. Now put some green chillies, chopped ginger, crushed coriander-pepper corns, red chilly powder, black salt , salt, aamchur powder, coriander leaves and mix everything well.

5.Divide the dough and the potato mixture into equal parts.

6.Now Take one round dough and coat it with dry flour and roll it in a circle of approx. 4 inch in diameter. Put one portion of stuffing in the center, wrap the stuffing with the circle sides and make a stuffed ball. Press it lightly and make a patty out of it.

7.Again coat it with dry flour and roll it carefully with very light hand and give it a circular shape of approx. 6-7 inch diameter.

8.Put the paratha on hot griddle or tawa and cook on medium flame. When it starts bubbling, flip it over. Apply oil on the side facing up. Then flip it over and apply oil on the other side. Cook till both the brown spots appear on both sides.

9.Aloo paratha is ready and you can have it with yogurt, chutney, ketchup or pickles.
