Macaroni Pasta in Red & White Sauce

Enjoy this yummy macaroni pasta in tomato and bechamel sauce with lots of veggies. This pasta recipe is perfect for birthday parties. My son loves this very much and I’m sure all the kids will like this recipe.
Ingredients
- Boiled Macaroni Pasta- 1 cup (Boil as per the packet instruction with some salt)
- Olive oil-1 tablespoon
- Butter- 1 teaspoon
- Bechamel sauce/White sauce- 1 cup
- Onion- 1 chopped
- Carrot- 1 chopped in cubes
- Green bell pepper/capsicum- 1 small cut in cubes
- Zucchini- Half cut in cubes
- Tomato puree- 1/2 cup (Pureed of 2 tomatoes)
- Tomato ketchup- 1 tablespoon
- Salt- 1 teaspoon or as required
- Ginger-garlic paste- 1/2 teaspoon
- Chopped ginger- 2-3 cloves
- Black pepper- 1/4 teaspoon
- Dry Oregano- 1/2 teaspoon
- Dry Basil- 1/3 teaspoon
- Dry Parsley- 1/3 teaspoon
- Parmesan and mozzarella cheese- 1 tablespoon
Method
Heat butter and olive oil in a pan, add chopped garlic and saute it for a few seconds, then add chopped onions and ginger-garlic paste. Saute it again for 2 minutes until it is soft and light pink in color.
Add carrots to it and fry it for a minute then add bell pepper and zucchini and stir it well. Add salt and give it a nice stir. Cook it for 2 minutes on medium to high heat.
Now add tomato puree and ketchup, mix it well. Cover it and cook it for 5 minutes on medium heat.
Open the lid and saute the mixture till it gets dry and the vegetables turn soft and crunchy. Increase the heat to high and let it dry.
Add Béchamel sauce with seasoning ( parsley, basil, black pepper, oregano). Now add grated cheese to it and mix everything well. If the gravy is too thick you can add a little water to it.
Add boiled macaroni to it and mix it with the sauce. Swtich off the gas and serve hot with some grated cheese of your choice.
