Sevai custard

Sevai is a type of rice vermicelli mainly used in India for many sweet and savory dishes. Today I am sharing with you a dessert “Sevai kheer with custard” .

Ingredients

  1. Roasted or plain vermicelli- 1/2 cup
  2. Whole milk- 1 litre
  3. Custard powder- 1.5 teaspoons
  4. Sugar- 1/3 cup

  1. Clarified butter or ghee- 1/2 teaspoon
  2. Cardamon powder- 1/3 teaspoon
  3. Chopped nuts- 1 tablespoon
  4. Vanilla essence- 1 teaspoon

Method

Heat ghee in a saucepan and roast the chopped dry fruits for 10 seconds, then add vermicelli and roast it too for a few seconds on medium heat.

Lower the heat and add milk to the saucepan and let the vermicelli cook for 5 minutes.

Meanwhile, In  a bowl mix custard powder with some milk and make a pouring consistency mixture and keep it aside.

Now, add the sugar and cardamom powder to the sevai kheer and stir it well. Let it simmer for 2 minutes, then slowly add custard mixture to the sevai kheer. Keep stirring  to prevent formation of lumps.

Finally, add vanilla essence, mix it well and switch off the gas. Let it cool completely before serving.

Serve it chilled in a serving bowl and garnish it with chopped pistachios.

 

Note-  If the custard sevai is too thick after cooling then do not worry. Just add plain cold milk and mix it well or you can also add whipped cream to it for a more creamy texture.
