Healthy sugar free and fat free wholewheat and oats cake

This cake is perfect for health conscious people or who are on diet as it is made from fruits, whole wheat and oats. This cake was my experiment in healthy baking especially for my sweet friend who is on a diet and has become very health conscious. Frankly speaking, I don’t want to spoil her diet regime. So, I thought of making something healthy and tasty for her. This cake is full of fruits and the sweetness comes from carrots, apple, pear and banana. Instead of sugar I added a teaspoon of honey which is optional. You can have a piece in your breakfast along with your tea, coffee or milk.
Ingredients
Carrots- 3 grated
Apple- 1 grated with skin
Pear- 1 grated with skin
Banana- 1 mashed
Eggs- 3
Olive oil- 1 tablespoon (approx 30 ml)
Honey- 1 teaspoon (You can add as per your taste)
Flavored yogurt- 125 gm (I am using strawberry flavor)
Whole wheat flour- 1 cup
Oats-1.5 cups
All purpose flour- 1/2 cup
Cinnamon powder- 1/2 teaspoon
Baking powder- 1/2 teaspoon
Method
In a bowl add all the fruits (Grated carrots, apple, pear and banana)
In another bowl break the eggs, add yogurt, honey and olive oil.
Mix all the wet ingredients with an electric mixer or a whisk.
Add all the dry ingredients in a deep bowl and mix them well. ( Wheat flour, Oats, All purpose flour, Cinnamon powder and Baking Powder)
Now mix all the ingredients together (Fruits, wet and dry ingredients) and mix them well with a spatula. If the cake batter is too thick then you can add a little milk to it.
Batter looks like this and is ready to go into the baking tin.
Now transfer the batter into greased baking pan. Smooth the top with a spatula and bake it for 60 minutes at 170º celsius.
Take out the cake from the oven and let it cool for sometime.
Slice it up and enjoy a piece of cake with a cup of tea.
