Orange & Banana Cake with Glaze (Without Eggs)

Serves:- 8-10 Level of cooking:- Easy
Ingredients
- All purpose flour – 1 and half cups
- Ripe Bananana- 2
- Orange- 1 (Juice and zest)
- Sugar- 1/2 cup (You can use more or less)
- Vegetable Oil- 1/2 cup
- Yoghurt- 1/3 cup
- Baking powder- 1 teaspoon
- Baking soda- 1/2 teaspoon
- Salt- 1/4 teaspoon
- Nutmeg- 1/3 teaspoon freshly grated
- Cinnamon powder- 1/2 teaspoon
For glaze
- Cream cheese- 1 tablespoon
- Powdered sugar- 1/4 cup
- Orange juice- 2-3 tablespoons
- Cinnamon powder- 1 pinch
Method
Step 1
Grease your bread loaf pan or any other pan with vegetable oil and put a parchment paper and keep it aside.
Pre-heat your oven at 170º celsius.
Step 2
Mix all the dry ingredients- In a bowl sieve flour, salt, baking powder, baking soda, cinnamon powder and freshly grated nutmeg powder together. Keep it aside.
Step 3
Grate orange and take out the orange zest in a plate and cut the orange and squeeze out all the juice in a mixing bowl.
Mash the bananas in a plate or bowl. Keep it aside too.
Step 4
Now wet mixture- In the mixing bowl containing orange juice add yogurt, sugar, oil and beat it until sugar dissolves completely.
Now add orange zest and mashed bananas and again beat it until well combined.
Step 5
Now add dry mixture to the wet mixture in two batches and mix it well with a spatula. Mix until well combined, do not over mix the batter. Pour the batter into the greased tin.
Step 6
Bake it for 35-40 minutes at 170º celsius until its done.
Step 7- Glaze
Whisk in sugar and cream cheese until its smooth. Add a teaspoon of orange juice and whisk until you get a nice runny glaze.
Pour over the cake and let it set for 10-15 minutes before serving. Enjoy the cake with tea or coffee.
Tip:-
If you don’t have cream cheese then you can make a glaze with orange juice and icing sugar. Take 1 cup icing sugar and add a tablespoon of orange juice at a time and mix it well until you get a nice runny pouring consistency glaze.
For sugarfree cake, you can add palms(khajur) instead of sugar.
