Carrot cake with cheese cream frosting

Ingredients for cake

  1. Shredded Carrots- 2 cups
  2. Cake flour- 2 cups
  3. White sugar- 1/3 cup
  4. Brown sugar- 1/2 cup
  5. Vegetable Oil- 1/2 cup
  6. Eggs- 4 medium
  7. Baking powder- 1 teaspoon
  8. Baking soda- 1/2 teaspoon
  9. Salt- 1/4 teaspoon
  10. Orange zest- 1 teaspoon
  11. Walnuts- 1 tablespoon (optional)
  12. Cinnamon powder- 1 teaspoon
  13. Nutmeg powder- 1 pinch

Ingredients for frosting

  1. Cream cheese- 2 tablespoon
  2. Butter- 1 tablespoon (salted or unsalted)
  3. Icing sugar- 2 cups, I used 1 cup in this recipe
  4. Vanilla essence- 1 teaspoon
  5. Cinnamon powder- 1 pinch

Method

1.Preheat oven to 170º celsius

2.Grease your baking tray or pan nicely with butter then put a parchment paper and grease it too.

3.Sieve the flour with baking powder, baking soda and salt and keep it aside.

4.Add walnuts and a couple of teaspoons of flour to shredded carrots and mix it well until all the carrots are well coated with the flour.

5.In a mixing bowl add oil, white sugar, brown sugar and eggs. Beat it with an electric mixer for 5 minutes or until it’s creamy.

6.Now add the orange zest, cinnamon and nutmeg powder to it and beat it for 2 minutes.

7.Now add the flour to the wet mixture and mix with a spatula until well combined.

8.Add the carrots and walnuts to the batter and mix it well until they are well incorporated in the batter.

9.Pour the batter into the greased baking pan and bake it for 30-35 minutes at 170ºC. You can check if the cake is done by inserting a toothpick. If it comes out clean the cake is done. If not, then bake it for some more time.

10.When the cake is ready, take out from the oven and let it cool.

11.When the cake gets to the room temperature, flip it on a tray and remove the parchment paper.

Frosting

  1. Mix the cream cheese and butter with an electric mixture for a minute on high speed.
  2. Gradually add sugar,vanilla and cinnamon powder. Mix it well until you get a nice creamy icing.
  3. Apply the icing evenly on top of the cake and decorate as desired. Enjoy your carrot cake with a cup of coffee or tea.
