Ingredients

  1. Mustard greens- 4 cups
  2. Spinach leaves- 2 cups
  3. Mustard oil- 1 tblsp
  4. Ghee or butter- 1 tsp
  5. Green chillies-3-4 finely chopped
  6. Ginger-2 tblsp finely chopped
  7. Cumin seeds-1/2 tsp
  8. Hing- 1 pinch
  9. Onion-1 finely chopped
  10. Besan(Chickpea flour) or maze flour-2 tblsp
  11. water-1 cup
  12. Salt- 1 tsp or to taste

Method

  1. Wash the mustard leaves and spinach leaves properly and roughly chopped them.
  2. In a kadhai ,dry roast besan (chickpea flour) until fragrant and Take it out in a bowl and make a paste of it by adding water.
  3. Switch on the gas and heat pressure cooker and add mustard greens, spinach leaves and 1 green chilli with 1 cup of water and cover it and cook it for 2-3 whistles. Let the cooker release all his pressure and transfer the saag in a bowl.
  4. When its cool down little then mash it with a help of potato masher or spatula, do not grind it in a grinder.
  5. Heat the other fry pan and add mustard oil, when its hot add the cumin seeds followed by hing. Add chopped ginger, chopped green chillies and stirĀ it for a second then add chopped onions and fry it for 3-4 minutes until onion turn into pinkish color. Do not brown the onions.
  6. Add the cooked saag to the onion mixture and add salt and keep stirring it and cook it for 5-7 minutes with the lid on.
  7. Now add the besan paste to the saag and check the seasoning, if needed add more salt and cover it with a lid and cook it for another 15 mins on a slow flame. Keep stirring in between so that it does not burn.
  8. Add little ghee and stir it well and switch off the gas and transfer it into serving plate and garnish it with white butter or ghee and serve hot with Makke ki Roti, Plain Roti or Paratha.
