Couscous Salad (Healthy and Tasty)

I am sharing my quick couscous salad recipe. This is one of my favorite salad recipes. It is very filling and healthy too. You can eat this healthy salad for lunch or dinner or whenever you feel hungry. Couscous is very versatile, you can add any vegetable of your choice or boiled chicken or turkey to it if you are a non-vegetarian. The quantities mentioned serve two people.

Ingredients

  • Couscous- 1/2 cup
  • Water- 1/2 cup
  • Salt- to taste
  • Bell peppers- half
  • Cucumber- Half small piece
  • Onion- 1
  • Green chilli- 1
  • Fresh coriander leaves- 1 teaspoon
  • Bolied Rajma/ Canned Red Beans- 1 tablespoon
  • Carrot- half small

Ingredients for Dressing

  • Olive oil- 1 tablespoon
  • Lemon juice- 1/2 tablespoon
  • Dijon Mustard-1 teaspoon
  • Honey- 1/2 teaspoon
  • Salt- to taste
  • Black Pepper- 1/4 teaspoon
  • Grated ginger- 1/2 teaspoon

Method

  • First, take a bowl and add couscous to it. Wash it 2-3 times with plain water.
  • Now add 1/2 cup water in it and salt to taste. Put it into a microwave and cook it for 3 minutes on medium to high setting.
  • After 3 minutes, take it out and keep it aside.
  • Finely chop carrots, cucumber, bell peppers, onion, green chilli, and green coriander. Now keep aside the chopped vegetables.
  • Next, we prepare the dressing. For this, take a small bowl and add olive oil in it. Then add lemon juice, dijon mustard, honey, salt, and black pepper. Whisk them together with a spoon and the dressing is ready.
  • Final assembly – Take the bowl with cooked couscous, add the chopped vegetables red beans and the dressing. Give it a nice mix. Cover the bowl with a cling wrap and keep in a refrigerator for few hours. Served chilled. It is very delicious, healthy and filling too.
