Vegan Almond Cake

Preparation time:- 10 minutes                     Baking Time:- 35-40 minutes

I love baking and keep experimenting in my kitchen. I am not a Vegan and do not have much idea about vegan food. Thanks to one of my vegan friend for whom I started trying new vegan recipes.  I used plain flour, cane sugar, almond yogurt and soya milk in it. One can use almond milk too. Do try this recipe once. It is very easy to make and the final outcome is delicious.

Ingredients

  • Flour- 1 cup
  • Almond flour- 1/2 cup
  • Cane Sugar- 1/2 cup
  • Baking Powder- 1/2 teaspoon
  • Baking Soda- 1/2 teaspoon
  • Salt- 1 pinch
  • Slivered Almonds-  2 tablespoons
  • Almond Yogurt- 1/2 cup
  • Oil- 1/3 cup
  • Soya/Almond Milk-  1/3 cup
  • Vinegar/apple cider- 1 teaspoon
  • Almond essence- few drops

Method

Take a deep bowl and mix all the dry ingredients (Flour, almond flour, sugar, baking powder, baking soda, and salt)

Mix it properly and make a well in the center and add in our wet ingredients. Add almond yogurt, then add oil and soya milk in it.

Mix it well until the mixture nicely combined. Finally, add the vinegar and give it a quick mix.

Take a baking bowl, grease it and line it with a parchment paper. Now pour the mixture into it. Sprinkle the slivered almonds on top and put it in the preheated oven and bake it for around 35-40 minutes at 175ºC.

Once it’s baked properly then take it out from the oven. Let it cool down for few minutes then flip it in a plate and carefully cover it with another plate and flip it back.

Vegan cake is ready to serve. If you want you can sprinkle some powdered sugar before serving.

Serve hot or cold with tea or coffee or you can serve it with some ice cream too.

[Note:- If you want to make a normal eggless cake then add cake flour instead of plain flour, normal yogurt instead of almond yogurt, plain cow milk instead of soya milk and normal refined sugar. You can also add butter to it.]
