Mango-Peach Cobbler (Summer Dessert)

Cobbler refers to a variety of dishes, particularly in the United Kingdom and the United States, consisting of a fruit or savory filling poured into a large baking dish and covered with a batter. Peach cobbler is very famous and here I made it with mangoes and peaches together. There are lots of variation of this. Here is my version which is very easy to make at home. Usually, it is made from canned peaches but I prefer using fresh peaches. It took just a few minutes of preparation and the final outcome was awesome. It goes very well with vanilla ice cream.

Ingredients for the fruit topping
- Peach- 1 cup sliced
- Mango- 1 cup sliced
- Lemon juice- 1 tablespoon (Juice of half lemon)
- Sugar- 1 cup
- Cardamom powder- 1/4 teaspoon
Ingredients for the batter
- Flour- 1.5 cups
- Eggs- 2
- Baking powder- 1 tablespoon
- Salt- 1/4 teaspoon
- Butter- half cup melted
- Sugar- 1 cup
- Milk- 1 cup
Method
- Preheat your oven to 175 degree Celsius.
- Heat a saucepan over medium flame. Add the mangoes, peaches, sugar, lemon juice and bring it to boil over high heat.
- Sprinkle the cardamom powder over it and give it a nice mix. Cook it for about a minute and when it starts boiling, switch off the stove. Do not cook it for long. Let it cool down a little.
- Pour the melted butter in the bottom of a baking dish and keep it aside.
- Now take a deep bowl and add the flour, sugar, baking powder and salt and mix it well with a help of a whisk.
- Add in eggs and milk and combine the mixture.
- Now pour this mixture over the melted butter. Next, pour the cooked fruits mixture. (Do not stir the mixture, leave it as it is)
- Place it in the oven and bake it for 30 minutes until golden brown in color. Take it out from the oven and let it sit for about 10 minutes before slicing.
- Serve warm cobbler with your favorite ice cream or enjoy as it is.
