Broccoli and Spinach Soup (Healthy and Low calorie)

This broccoli and spinach soup is very healthy, delicious and easy to make. This soup is ideal for those who want to shed a few kilos. Besides being low in calories it contains all the essential nutrients that our body needs. Do try this recipe and enjoy this healthy and delicious soup.

Ingredients

  • Broccoli- 1 medium size
  • Baby Spinach- 1 big bowl (100 gms)
  • Milk- 1/2 cup
  • Water- 1 and half cups
  • Olive oil- 1 tablespoon
  • Garlic- 5-6 pods roughly chopped
  • Green chilli- 1 small chopped
  • Cardamom (Elaichi)- 2
  • Cinnamon stick ( dalchini)- 1 small piece
  • Freshly ground Nutmeg powder- 1 pinch
  • White pepper- 1/3 teaspoon (You can use black pepper also)
  • Salt to taste

Method

Cut the florets of washed broccoli and keep it with washed spinach.

Heat a pressure cooker on medium heat and add olive oil. Drop in a cinnamon stick, cardamom, green chillies followed by garlic and fry it for few seconds.

Add broccoli and spinach and fry it for 2 minutes. After 2 minutes add milk and water to it and cover the lid of the cooker and pressure cook it for 3 whistles.

After 3 whistles switch off the gas and let the pressure release and wait till the mixture cools down.

Keep a strainer over a bowl and transfer the cooked broccoli and spinach on strainer and save the stock, we will use this in soup.

Now grind the brocooli and spinach along with spices and make it into a fine paste by using little stock.

Again strain this puree through the strainer and keep the silky puree in a bowl.

Heat a pan and add stock to it and bring it to boil. Now add strained puree and give it a nice mix. Add the seasoning: salt, nutmeg powder and white pepper. Stir it well and let it cook for a minute. Do not boil it and switch off the gas.

Serve hot , if you want you can garnish it with fresh cream. Enjoy this healthy and delicious soup anytime.
