Lehsuni Chicken

Lehsuni Chicken is Indian chicken curry with a little extra flavor of garlic and hence the name “Lehsuni Chicken” . It is perfect for lunch or dinner. If you want a special lunch with your family, then do try this.

Ingredients for marination

  • Chicken- 1 kg
  • Yogurt- 3 tablespoons
  • Ginger-garlic paste- 1 tablespoon
  • Salt- 1 teaspoon
  • Turmeric powder- 1/2 teaspoon
  • Red chilli powder- 1 teaspoon
  • Coriander powder- 1 teaspoon
  • Garam masala- 1 teaspoon
  • Lemon juice- 1 teaspoon

Ingredients for making paste

  • Onions sliced- 1 big
  • Garlic cloves- 8-10
  • Tomato chopped- 1/2
  • Cumin seeds- 1 teaspoon
  • Mace (Javitri)- 1 small piece
  • Cinnamon stick (Daalchini) – 2 inch piece
  • Cloves (Laung)- 5-6 pieces
  • Green cardamom (Elaichi)- 5-6
  • Dry red chilli- 1
  • Coriander seeds (Dhania)- 1 tablespoon
  • Pepper corns (Kali mirch)- (6-8)

Other Ingredients

  • Onion- 1 small sliced
  • Bay leaf- 2
  • Cumin seeds- 1/2 teaspoon
  • Hing (Asafoetida)- 1/4 teaspoon
  • Red chilli powder- 1/2 teaspoon
  • Turmeric powder- 1/3 teaspoon
  • Garam masala- 1/2 teaspoon
  • Salt to taste
  • Water for gravy as required
  • Oil- 2-3 tablespoons
  • Kasoori methi (Dry fenugreek)- 1 teaspoon

Method

Marinate the chicken with all the ingredients mentioned above. Mix them well and cover it leave it for half an hour.

Heat a pan, add very little oil and drop all the ingredients that are required to make a paste (cumin seeds, coriander seeds, mace, pepper corns, cardamom, cloves, cinnamon, red chilli, onion, tomato and garlic) to it and fry them until they turn light brown in color.

Switch off the gas and let it cool for sometimes. Put them into a grinder and make a paste.

Add yogurt to the masala and again grind it to make a fine paste.

Take out in a bowl and keep it aside.

Now heat oil in a kadhai and add bay leaf, cumin seeds and hing. Let it roast for a few seconds.

Drop in sliced onions and fry them until it turns light golden brown in color.

Now add powdered spices and salt to it and mix it well.

Immediately add grounded paste in it and fry the masala for 5 minutes on medium to high flame.

Keep frying the masala for another 5 minutes until oil starts to separate from the masala.

Now add the marinated chicken in it and mix them well with the masala.

Keep frying the chicken on high for 5 minutes.

Reduce the heat to medium and cover it. Let it cook for 7 minutes on low flame.

Open the lid and fry the chicken well, make sure the masala does not stick to the bottom.

Now add water according to the gravy needed. Here I have added one cup of water. Mix it well.

Add kasoori methi to it, cover it with a lid and let it simmer for 5 more minutes.

Open the lid and stir the chicken and switch off the gas.
