Boiled Fruit Cake or Christmas Cake

Ingredients

  1. For caramel mixture- Sugar-1/2 cup and hot water- 1/2 cup
  2. Candid fruits- 1 cups or tutti fruity
  3. Dry fruits(Any of your choice)- Raisins- 1/2 cup, Prunes-1 cup, Black raisins or sultanas-1/2 cup, Wallnuts-1/2 cup
  4. Flour- 2 1/2 cups
  5. Butter-150 gms
  6. Eggs-4 at room temperature
  7. Brown sugar or muscovado sugar- 1 cup
  8. Honey-2 tablespoon
  9. Orange -1( juice of 1 orange and zest of it)
  10. Cocoa powder- 1 tablespoon
  11. Dark chocolate- 5-6 pieces (optional)
  12. Cinnamon powder-1 teaspoon
  13. Nutmeg powder-1/4th teaspoon
  14. Garam masala powder Or Mix spices-1 teaspoon
  15. Baking powder- 1 teaspoon
  16. Baking soda-1/2 teaspoon
  17. Parchment papers for lining the cake tin

Method

 

Soaking nuts and fruits (Prepared a day before)

  • In a pan, add half a cup of sugar and heat on medium flame.
  • Once the sugar starts melting and get caramelized, lower the flame. When caramel starts bubbling, switch off the flame and pour half a cup of hot water to the caramel (Be careful at this point of time, its very hot and bubbles can hurt your skin. Wearing gloves is advisable). Stir it well and switch on the flame again.
  • After boiling the syrup for about a minute, add the candied fruits and dry fruits, mix for about 4-5 minutes in low flame until caramel gets thickened.
  • Switch off the flame and cover the mix to cool down and leave it overnight.

Making cake

1.Preheat the oven to 150ºC

2.Line the sides and bottom of a tin with parchment paper.

3.Place the caramelized fruit, 150 gm butter, half cup brown sugar, 2 tablespoon honey, 1 orange juice and zest, mixed spice (cinnamon, nutmeg & garam masala) and 1 tablespoon cocoa powder or dark chocolate into a large wide saucepan. Heat the mixture until the butter melts. Then remove the saucepan from the heat and leave it to cool.

4.Add the 4 eggs at room temperature, 2 and half cups of self risen flour, 1 tsp baking powder and half tsp baking soda. Mix well with a spoon or spatula until the ingredients have combined well.

5.Carefully pour the fruit cake mixture into the lined cake tin. Transfer the cake tin to the oven and bake for one hour. You can check if the cake is perfectly cooked by inserting a toothpick. If its comes out clean, it indicates the cake is done else cook it for some more time.

6.Place the cake on a cooling rack. Once the cake has cooled, remove it from the tin.
