Pumkin Sabji

Preparation time:-  15 minutes                      Cooking Time:- 30 minutes

Sweet and sour pumpkin sabzi that goes very well with Roti, Paratha or Poori . It is very easy to make and very tasty too. I learnt this recipe from my mother in law and hence it is a special one for me.

Ingredients

  • Red Pumpkin (Kohra/Kaddu)- 500 gm (Cut into small pieces)
  • Red chilli powder- 1/3 teaspoon
  • Turmeric powder- 1/3 teaspoon
  • Coriander powder- 1/2 teaspoon
  • Ginger-garlic paste- 1 teaspoon
  • Oil- 1.5 tablespoons

For Tempering

 

  • Bay leaves- 2
  • Dry red chilli- 1 or 2
  • Pannch phoran- 1/2 teaspoon
  • Hing (Asafoetida)- 1/4 teaspoon
  • Salt to taste 1/2 teaspoon
  • Sugar- 1 teaspoon
  • Lemon juice- few drops

Method

 

Heat oil in a kadhai over medium heat. Once oil is hot, drop in paanch phoran seeds, hing, bay leaves, dry chillies and cook it for few seconds.

Add pumkin pieces and let it fry on a high flame for few minutes.

Now add all the dry spices and ginger-garlic paste (salt, turmeric, red chilli powder and coriander powder), mix them well and keep frying them on medium heat for 2-3 minutes.

Cover it with a lid and cook it for 15 minutes covered on low heat.

Open the lid and smash it with the help of  spatula.

Cook it uncovered on medium flame until all the water absorbed.

Squeeze in lemon juice, add sugar and mix them well.

Cook it for one minute and then switch off the gas.

And it is ready to serve. Serve hot or cold with Roti, Paratha or Poori.
