Chicken Tikka

Ingredients for 1st Marination
- Chicken breast- 1 cut into small cubes (15 pieces)
- Ginger-garlic paste- 1 teaspoon
- Lemon juice- 1 tablespoon
- Kashmiri red chilli powder- 1 teaspoon
- Salt- 1/2 teaspoon or as required
Ingredients for 2nd Marination
- Thick or hung yogurt- 2 tablespoons or 1/3 cup
- Oil- 2 tablespoons
- Mustard oil- 2 tablespoons
- Chickpea flour(Besan)- 1 and half teaspoons
- Carom seeds (Ajwain)- 1/2 teaspoon
- Kashmiri red chilli powder- 1 tablespoon
- Ginger-garlic paste- 1 tablespoon
- Salt- 1/2 teaspoon
- Black salt- 1/3 teaspoon
- Garam masala- 1/2 teaspoon
- Onion and Capsicum- half cut into cubes
Method
Step 1- First Marination
Take the washed and dry chicken pieces in a deep bowl. Now add salt, kashmiri red chilly, ginger-garlic paste, and lemon juice to it. Mix it well and keep it side and marinate it for half an hour.
Step 2- Second Marination
In a bowl take thick yogurt and keep that bowl aside.
Now roast the besan. In a small pan add 2 tablespoons of oil. When its hot then add carom seeds (Ajwain) to it followed by besan. Cook it on medium flame for a minute until a nutty flavour starts coming from the besan. Do not brown it and keep stirring so that it does not burn. Switch off the gas and immediately pour this in to the yogurt bowl.
Now add 1 teaspoon of kashmiri chilly powder, ginger-garlic paste, black salt, common salt to taste and garam masala powder and mix it well into a smooth paste.
Now add the mustard oil and mix it well until you get a homogenous mixture. Your second marination is ready.
Now pour this to the marinated chicken and mix it well. Cover it and keep it in refrigerator for overnight or at least 4-6 hours.
Step 3- Roasting
Preheat your oven at 180º celsius .
Take the bamboo skewers. Bamboo skewers have to soaked in water for an hour otherwise they will get burnt in the oven.
Put around 4 pieces of chicken tikka in each skewer along with onion and capsicum pieces. Now its ready to cook in a oven.
Line the oven tray with aluminum foil and put the chicken skewers on it.
Bake it for 10-15 minutes at 180º celsius. Keep checking every 6 to 8 minutes because breast pieces cook fast.
Now flip it and bake it for another side and cook it again for 8-10 minutes till the chicken is done.
Take out from the oven and serve hot.
